Beef Pepperoni

Homemade Beef Pepperoni

Description

This homemade beef pepperoni is a fully cooked, uncured version made with ground beef, paprika, garlic, and aromatic spices. It has a savoury, lightly smoky flavour and a firm texture that becomes easier to slice after chilling.

Use the slices on pizza, in sandwiches, or in toasted wraps. Because this recipe is cooked rather than cured and dried, it stays more tender than commercial pepperoni and needs refrigeration or freezing.

Prep Time: 15 minutes
Chilling Time Before Cooking: 2 hours
Cook Time: Approximately 45–60 minutes
Chilling After Cooking: At least 4 hours
Yield: 2 small logs
Servings: Approximately 10

Ingredients

For the Beef Mixture

  • 500 g ground beef, approximately 85–90% lean
  • 2 tablespoons ice-cold water
  • 1 tablespoon neutral oil

For the Pepperoni Seasoning

  • 2 teaspoons smoked paprika
  • 1 teaspoon sweet paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon mustard powder
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon crushed fennel seeds
  • ½ teaspoon red chilli flakes, or to taste
  • ¼ teaspoon ground coriander
  • ¼ teaspoon sugar, optional

Step-by-Step Instructions

1. Prepare the Seasoning

Combine the smoked paprika, sweet paprika, garlic powder, mustard powder, salt, black pepper, crushed fennel seeds, chilli flakes, coriander, and optional sugar in a small bowl.

Crush the fennel seeds finely so their flavour spreads evenly throughout the meat.

2. Mix the Beef

Place the chilled ground beef in a large bowl. Add the seasoning, oil, and ice-cold water.

Mix and knead firmly for 3–4 minutes until the mixture becomes sticky and cohesive. This helps the cooked logs hold together when sliced. Keep the mixture cold; refrigerate briefly if it starts warming.

3. Chill

Cover and refrigerate for approximately 2 hours to allow the flavours to develop.

4. Shape the Logs

Preheat the oven to 160°C/320°F.

Divide the mixture into two equal portions. Shape each into a compact log approximately 4 cm thick, pressing firmly to remove air pockets.

Wrap each log in baking parchment, then wrap securely in aluminium foil. Use oven-safe materials and place the logs on a rimmed baking tray.

5. Cook Thoroughly

Bake for approximately 45–60 minutes. Cooking time depends on the thickness of the logs and your oven.

Insert a food thermometer into the centre of each log. Ground beef must reach at least 71°C/160°F throughout. Colour alone is not a reliable guide.

6. Cool and Refrigerate

Rest for 10–15 minutes, then carefully unwrap and drain any released liquid.

Transfer to a clean, shallow container and refrigerate promptly, within 2 hours of cooking. Chill for at least 4 hours, preferably overnight, before slicing.

7. Slice and Use

Cut thinly with a sharp knife. For pizza, arrange the chilled slices over your toppings before baking. For a lightly browned finish, briefly sear slices in a frying pan.

Tips and Notes

  • Avoid extremely lean beef, which can produce dry, crumbly slices.
  • Mix until sticky and pack the logs tightly for a cohesive texture.
  • Slice only after thorough chilling.
  • Adjust chilli flakes to your preferred heat level.
  • Smoked paprika provides smoky flavour without requiring a smoker.
  • These slices may not curl or crisp like commercial cured pepperoni.

Serving Suggestions

Add to homemade pizza, grilled cheese sandwiches, pasta bakes, or breakfast wraps. Thin slices also work well in toasted rolls with cheese and tomato sauce.

Storage and Reheating

Refrigerate in an airtight container for 3–4 days. Freeze sliced portions, separated with parchment, for up to 2–3 months for best quality. Reheat leftovers to 74°C/165°F.

This recipe is not shelf-stable and should not be air-dried or stored at room temperature.

Frequently Asked Questions

Can I use chicken instead?

Yes, but the flavour and texture will change. Ground chicken must reach 74°C/165°F during cooking.

Do I need a sausage casing?

No. The parchment and foil support the logs during cooking.

Why is my pepperoni crumbly?

The beef may be too lean, insufficiently mixed, loosely shaped, or sliced while warm.
