- 4 bone-in or boneless pork chops (about 1 inch thick)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon fresh thyme (or ½ tsp dried)
- 1 teaspoon fresh rosemary (or ½ tsp dried)
- Optional: lemon wedges for serving
1. Prep the Pork ChopsPat pork chops dry with paper towels. Season both sides with salt, pepper, and paprika. Let sit at room temperature for 10–15 minutes while you prep the rest. 2. Sear the Pork ChopsHeat olive oil in a large skillet over medium-high heat. Once hot, add the pork chops. Sear for 3–4 minutes on each side until golden brown. 3. Make Garlic Herb ButterReduce heat to medium-low. Push pork chops to one side of the pan. Add butter, garlic, thyme, and rosemary. Stir the butter mixture for 1 minute until fragrant. 4. Baste the ChopsSpoon the melted butter and herbs over the pork chops repeatedly for another 2–3 minutes, until they reach an internal temperature of 145°F (63°C). 5. Rest and ServeRemove pork chops from the pan and let rest for 5 minutes. Serve with lemon wedges and drizzle any leftover herb butter on top.
