Ingredients

Instructions
 

  • Sear the meat: Heat olive oil in a skillet. Season the chuck roast generously with salt and pepper, then brown it on all sides for 3–4 minutes per side. This adds extra flavor.
  • Layer the veggies: In your crock pot, add chopped onion, garlic, carrots, and potatoes.
  • Add the meat: Place the seared roast on top of the vegetables.
  • Make the broth: In a bowl, mix beef broth, tomato paste, and Worcestershire sauce. Pour over the roast.
  • Add herbs: Toss in rosemary and thyme.
  • Cook: Cover and cook on low for 8–10 hours or high for 4–6 hours, until the meat is fork-tender.
  • Serve: Slice or shred the beef and spoon it over the veggies with broth.
