Ingredients
  

  • 1 lb flank steak (or skirt steak)
  • 3 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp black pepper

For the Bowl:

  • 1 cup cooked brown or white rice
  • ½ avocado, sliced
  • ½ cup cherry tomatoes, halved
  • ¼ cup black beans, rinsed and drained
  • ¼ cup corn (grilled or canned)
  • ¼ cup crumbled feta or queso fresco
  • Fresh cilantro
  • Lime wedges

Instructions
 

  • Marinate the Steak: In a bowl or zip-top bag, mix marinade ingredients. Add steak and refrigerate for at least 30 minutes.
  • Cook the Steak: Grill or sear the steak in a hot skillet for 4–5 minutes per side. Rest for 5–10 minutes, then slice thinly against the grain.
  • Assemble the Bowl: Add rice to your bowl. Top with sliced steak, avocado, cherry tomatoes, beans, corn, and cheese.
  • Garnish & Serve: Add cilantro and a squeeze of lime. Optional: drizzle with chipotle mayo or avocado crema.
