Total Time 1 hour hr 20 minutes mins
- 1 (2) lb pork loin roast
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 tbsp rosemary (fresh or dried)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika (optional)
- 1 tbsp Dijon mustard (optional)
- ½ cup chicken broth or white wine
Preheat oven to 350°F (175°C).
Pat the pork roast dry with paper towels.
Mix olive oil, garlic, rosemary, salt, pepper, and paprika into a paste.
Rub the mixture all over the pork.
Place in a roasting pan and add broth or wine to the bottom of the pan.
Roast for 50 to 60 minutes, or until the internal temperature reaches 145°F.
Let it rest for 5–10 minutes before slicing.
The best way? Use an instant-read meat thermometer. Insert it into the thickest part of the roast, avoiding bone or fat.
- 145°F = medium-rare (with a pink center)
- 160°F = well-done
- Always rest your roast for 3–10 minutes before slicing
